Native to: Mediterranean, western Asia. Latin name Lens culinaris&lt;br /&gt;They are high in nutritional value and are available throughout the year. So here 3 quick recipes that I love, hope you do too. Good health.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold; text-decoration: underline;"&gt;Lentil and Carrot Pate&lt;/span&gt;&lt;br /&gt;90gms of onions&lt;br /&gt;90gm of grated carrot&lt;br /&gt;1 clove of garlic&lt;br /&gt;1 teaspoon garam masala&lt;br /&gt;1 teaspoon ground cumin&lt;br /&gt;1/2 teaspoon tumeric &lt;br /&gt;1 cup of Red lentils in boiling water &amp;amp; cook until tender.Drain&lt;br /&gt;Cook the onions &amp;amp; garlic in a little olive oil until lightly brown,add the carrot.Cook for one minute &amp;amp; add the spices &amp;amp; cook for another minute.&amp;nbsp; &lt;br /&gt;Mix the spice mixture into the drained lentils and season with pepper as required.&lt;br /&gt;Serve on oatcakes or rice cakes as a great little snack. &lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold; text-decoration: underline;"&gt;Lentil Soup&lt;/span&gt;&lt;br /&gt;2 Onions chopped &lt;br /&gt;2 cloves Garlic chopped&lt;br /&gt;2 stalks of celery chopped&lt;br /&gt;1 teaspoon of fresh chopped ginger&lt;br /&gt;1 Carrot sliced&lt;br /&gt;Brown in a little olive oil.&lt;br /&gt;1 lo salt stock cube&lt;br /&gt;1 cup of lentils &lt;br /&gt;Place into&amp;nbsp; 5 cups of boiling water and cook until tender.Do not drain.Add the softened onions and garlic.Stir.
